Holiday Cranberry Relish

Special thanks to: NB, Lucedale, MS Servings: 20 Directions: Nancy's Cranberry Relish 1 bag fresh cranberries, washed and bad ones picked out 1 c. Surrratt Farms pecans 3 stalks of celery, washed and strings removed 1 large navel orange, washed and cut in 8 pieces 1 large apple, washed and cored 1 small can crushed pineapple, drained 1 can jellied cranberry sauce, mashed 1 large box of cranberry, strawberry, cherry or raspberry Jello 2 cups boiling water 1 c. miniature marshmallows, (optional) Wash and prepared all fruit as directed. In food processor, grind up cranberries, apple, whole orange, (including peeling or "zest"), celery, and pecans. Place in large bowl. Add crushed pineapple, and jellied cranberry sauce, and stir all ingredients together. Heat 2 cups of water to boil, mix with Jello as directed. Pour Jello over fruit mixture and place in Jello mold or serving bowl or bowls. Cover and refrigerate until set. If you want to add marshmallows, fold them into the slightly jelled mixture, after about 1 hour. Chill overnight and remove from mold or serve in bowl with holiday meals. Special Notes: I used to make this for the family gathering Thanksgiving meal. It will serve a large family and usually some leftover. It freezes well too for later on in the year when you are craving those Thanksgiving goodies.
