Elegant Pecan Crusted Tilapia in Champagne sauce

Special thanks to: KP, KERRVILLE, TX Servings: 4 Directions: Preheat oven to 350F. Place 4 Tilapia filets, approx 6-7oz each on an oiled baking sheet. sprinkle each filet lightly with garlic powder and lemon pepper and drizzle with about 1/2tsp olive oil. . Put 3/4C mayonnaise (not salad dressing) in small bowl. Mix in 1/4C finely grated Parmesan cheese. Using rubber spatula, paint each filet with some of the mayonnaise. Discard remaining mayonnaise for food safety reasons. Again, very lightly sprinkle each filet with lemon pepper, paprika, garlic powder, and ground white pepper. On top of mayonnaise, sprinkle each filet with 1 1/2Tbspn finely chopped Surratt Farms Pecans. Pour 1C champagne (or dry white wine) around filets. Bake in preheated 350F. oven for approximately 20 minutes or until the topping is set and very lightly browned. Sprinkle with freshly chopped parsley and serve immediately. Special Notes: This is a very elegant entree and can be dressed up even more by adding some crab meat to the mayonnaise mix. Suggest serving this entree with a savory rice pilaf, tender -crisp green beans, garden salad and the rest of the champagne or wine.
