Pecan Apricot Crusted Fish
Special thanks to: PC, Leesburg, FL Servings: 1 Directions: Approximately... 11/2 pounds of white fish, I prefer using a whiting o cod. 3/4 cup finely chopped Surratt Farms pecans 1/2 Cup of apricot jam Salt and pepper to taste. Dry fish with a paper towel. Spread with the apricot jam on one side Press the chopped pecans into the glazed fish. Salt & pepper. Set oven to375 F In a 9x13 oven proof dish, place the prepared fish glazed side up. Bake for about 12-15 mins. after that time, check fo flakiness. If flaky, it is done. Enjoy as we do. Special Notes: This recipe I make on several occasions, we do enjoy. With a salad served, a delicious meal!
