Crunchy Salmon

Special thanks to: SJ, Sitka, GA Servings: 5 Directions: * 8 pieces of salmon fillets cut in 4-5 oz. portions * 2 cups Surratt Farms pecans * 1 Tbs. garlic * 1/2 tsp. salt * 1/4 tsp. cayenne * 1/2 cup olive oil (extra virgin) Grind or chop the pecans into a coarse meal. Mix together and add in all the remaining ingredients. Dip salmon fillets in olive oil and roll in pecan crumb mixture. Heat a large fry pan and lightly sauté the salmon on one side then place fish on a baking sheet and roast in oven @ 450 degrees for 4-5 minutes or until done to taste. Special Notes: Great for the lo-carb hi protein diet.
