Traditional Greek Wedding Cookies
Special thanks to: NL, Sutton, MA Servings: 1 Directions: 2 -cups butter (1 lb. unsalted) 8 -Tbsp confection sugar 4 -Cups Surratt pecans (chopped) 4- Cups flour 2 - Tbsp. vanilla 2 - Tbsp. ice water Cream butter thoroughly and add 8 tbsp. confection sugar. Continue creaming until all is blended. Mix nuts and flour and add to cream mixture adding gradually until well blended. Add vanilla and ice water and mix. Dough will be soft. Roll pieces of dough with palm of hand into 1-inch rolls or half moon designs. Bake on a cookie sheets for 35 min. in a 350 degree oven till golden brown. You can also roll to 1/2 inch thick and cut out with cookie cutter using a star or whatever is appropriate for the holiday. Cool. Sift additional powdered sugar generously over rolls and place in cookie cookie container to preserve. Arrange in layers carefully to avoid breaking while sifting the sugar after each layer. Makes 50-55 pieces. Special Notes: These are traditional cookies served at Greek weddings but are also made during the holidays.
