Mrs. Gayle's Good Cookies

Special thanks to: GC, Odessa, TX Servings: 20 Directions: Mrs. Gayle’s Good Cookies (makes 4-5 dozen cookies) Preheat oven to 350 degrees 2 sticks margarine-softened 1/2 cup brown sugar, packed 1/2 cup sugar 2 eggs 1 tsp vanilla 2 cups flour 1 tsp baking soda 1 tsp Cream of Tartar 1 twelve oz pkg semi-sweet or milk chocolate chips (sometimes I even mix in some peanut butter chips or butterscotch chips-or whichever kind I have on hand) 1/2 cup flaked coconut (optional) 1/2 cup finely chopped Surratt Farms pecans 1/4 cup cinnamon 1 cup sugar Cream together margarine & sugars. Add eggs & vanilla & mix well. Mix together flour, baking soda & Cream of Tartar & add to sugar/egg mixture. Stir in pecans, coconut & chocolate chips. Mix together cinnamon & sugar in flat pan. Roll dough into balls about the size of a walnut. Roll into cinnamon/sugar mixture & place on cookie sheets lined with foil. Bake at 350 degrees for about 11-14 minutes. Cool on wire racks, then place in sealed container. Special Notes: Sort of a combination of chocolate chip & Snicker Doodle, these cookies take a while to prepare, but are worth the extra effort! They've been a favorite of my family & co-workers for years. The secret is not to overbake them. They need to appear slightly under-done when removing from the oven.
