Special thanks to: BS, Gladewater, TX Servings: 12 Directions: Cream 1 cup shortening, 1/2 c. brown sugar & 1/2 c. white sugar. Add 1 egg, juice of 1 lemon, & 1 tablespoon lemon rind. Sift together 2 cups flour, 1/4 teaspoon soda, & 1/2 teaspoon salt. Gradually add to creamed mixture, then add 1 cup Surratt Farms chopped pecans. Form into a roll about 2" in diameter; wrap in wax paper; chill 1-2 hours. Cut into 1/4 inch slices and bake 8 to 10 minutes at 400 degrees. Special Notes: My mom made these every Christmas. They are very light & crispy - melt in your mouth!
