Special thanks to: CH, Hendersonville, TN Servings: 12 Directions: FRESH APPLE CAKE 2 CUPS SUGAR 1 TSP BAKING SODA 1 1/2 CUPS WESSON OIL 1/2 TSP NUTMEG 3 LARGE EGGS 3 CUPS ALL-PURPOSE FLOUR 1 TSP CINNAMON 1 1/2 TSP VANILLA EXTRACT 3 CUPS GRANNY SMITH APPLES, PEELED & DICED 3/4 CUP FLAKED COCONUT 1 CUP SURRATT FARMS PECAN PIECES MIX OIL & SUGAR WELL. ADD EGGS AND BEAT WELL. COMBINE FLOUR, SALT, BAKING SODA, CINNAMON, NUTMEG. SLOWLY ADD FLOUR MIXTURE TO THE OIL & SUGAR MIXTURE & MIX UNTIL WELL BLENDED. ADD VANILLA, APPLES, COCONUT & PECAN PIECES. MIX WELL. SPOON INTO 9" GREASED TUBE PAN. COOK AT 325 FOR 60-80 MINUTES OR UNTIL PICK COMES OUT CLEAN. REMOVE FROM PAN. TOP WITH ICING. ICING. MIX 1/2 CUP BROWN SUGAR WITH 1/3 CUP BUTTER. COOK OVER MEDIUM HEAT,CONSTANTLY STIRRING UNTIL BUBBLY. REMOVE FROM HEAT. ADD 1 TSP VANILLA. ADD 2 TBSP. PUMPKIN SPICE COFFEE CREAMER OR MILK. MIX WELL. SPOON OVER WARM CAKE. Special Notes: THIS IS A WONDERFUL FRESH APPLE CAKE THAT IS A SURE HIT. WHERE EVER I TAKE IT. IT IS BETTER THE NEXT DAY, SO IT CAN BE MADE A DAY OR TWO EARLIER. ENJOY!!!!!
