Apple Cake with Cream Cheese Frosting

Special thanks to: WN, Brandon, MS Servings: 16 Directions: Stir together 1/2 cup melted butter, 2 cups sugar, 2 large eggs, and 1 teaspoon vanilla extract. Combine 2 cups all-purpose flour, 1 teaspoon baking soda, and 1 teaspoon salt. Add Flour mixture to butter mixture, stirring until blended. Stir in 4 Granny Smith apples that have been peeled and chopped ( about the size of peas). Add 1 cup chopped Surratt Farms pecans. Spread in a greased 13x9 inch pan. Bake at 350 degrees for 45 minutes or until a wooden pick inserted in center comes out clean. Cool completely in the pan. While the cake is cooling, Mix 1 stick room temperature butter, 8 ounces room temperature cream cheese, 1 teaspoon vanilla extract. When mixed thoroughly, add 1 box sifted confectioners sugar and 1 cup of chopped Surratt Farms pecans (or you can wait and put pecan halves on top). Mix well and spread on top of cooled cake. Delicious!!!! Special Notes: This is also very good if you toast the pecans before adding to the frosting.
