Mexican Fruit Cake

Mix in large mixing bowl: 2 cups sugar 2 cups flour 2 teaspoons soda 1 1/2 cups chopped Surratt Farms Pecans In separate bowl, mix: 2 eggs 1 20 oz can crushed pineapple (undrained) Stir into the above mixture. Bake for 30 to 35 minutes in a greased and floured 9 x 13 pan. While cake is warm frost with the following: Mix together: 1 8oz. pkg. cream cheese (softened) 1/2 stick margarine (softened) 1 teaspoon vanilla 1 box powdered sugar Special Notes: Easy to make and is so moist and delicious.
