Banana Nut Cake

Special thanks to: JB, Dallas, TX Servings: 1 Directions: 1 pkg. Duncan Hines yellow cake mix 1 3-1/2 oz pkg. Instant vanilla pudding mix 3 large eggs 1/2 cup vegetable oil 1/4 cup sherry or rum 1/4 tsp. salt 1/2 cup water 1 cup (3) mashed ripe bananas 1 tsp. vanilla 1 Tbsp. cinnamon 1 tsp. nutmeg 1 cup Surratt Farms pecans, chopped Put all ingredients except pecans in large mixing bowl. Beat on medium speed 3 minutes; add pecans. Pour into greased and floured tube or Bundt pan. Bake at 350 degrees for 35-40 minutes. When cake is done, remove from oven and punch holes in top of cake with toothpick. Pour glaze over top and let set in pan for an hour or two before removing to serving plate. Glaze: 1/4 c. sherry or rum, 1/4 cup water, 1/2 cup brown sugar. Bring to boil in small saucepan and simmer for 2 or 3 minutes; set aside while cake is baking. Special Notes:
