Zucchini Bread

Special thanks to: PR, Lake Kiowa, TX Servings: 20 Directions: 3 C flour 2 C sugar 3 tsp. cinnamon 1 tsp. baking soda 1 tsp. salt 1/4 tsp baking powder Sift all above together. and Add 1 C oil 3 eggs 3 tsp. vanilla 2 C grated zucchini squash (use peel and all) 2 cups Surratt Farms pecans chopped Mix well. Grease 2 loaf pans. Bake at 350 for 1 hour or until done. Special Notes: This freezes well. Extra moist. Good also when serving with a dollop of cool whip or whipped cream. Good with coffee in the morning. It really is good anytime.
