Apple Carrot Muffins

Special thanks to: GB, Lewisville, TX Servings: 12 Directions: Apple Carrot Muffins 1 ¾ cups raisin bran cereal 1 ¼ cups flour ¾ cup sugar 1 ¼ teaspoon baking soda 1 teaspoon cinnamon ¼ teaspoon salt 1 egg ¾ cup buttermilk ¼ cup canola oil ¾ cup finely chopped, peeled tart apple ¾ cup grated carrot ½ cup chopped Surratt Farms pecans In a large bowl combine dry ingredients. In a small bowl beat egg, buttermilk, and oil together. Stir into dry ingredients just until moistened. Fold in apple, carrots, and pecans. Fill greased or paper-lined muffins tins ¾ full. Bake at 400 degrees 20-25 minutes or until a toothpick comes out clean. Special Notes:
