Cinnamon Pecan Muffins

Special thanks to: SB, Lindsborg, KS Servings: 16 Directions: 1/2 cup butter, melted 1 1/2 cups sugar Mix until creamy. 2 eggs 2 tsp. vanilla 1 cup sour cream Add in order given, mix well after each addition. 1/2 tsp baking soda 1/2 tsp salt 1/4 tsp nutmeg 2 1/2 tsp baking powder 2 1/2 cups flour Stir dry ingredients together, add to batter & partially mix. 1/2 cup pecan pieces, crisped in microwave for 20 seconds, cooled 1/2 cup cinnamon chips Add to batter and mix until just combined. Keep in the refrigerator in a covered container. Portion 1/4 cup into lined muffin cups. Sprinkle with additional chopped pecans and cinnamon & sugar. Bake at 350° for 25 to 30 minutes. Makes approx. 16 muffins. Special Notes: This recipe is a staple in our bakery. We get the mini cinnamon chips from King Arthur Flour.
