Pat's Pecan Spread (Pecan/Cheese Log)
Special thanks to: PS, Gainesville, TX Servings: 8 Directions: 1 8 0z. pkg. cream cheese,softened 2 Tbls. milk 2 ozs. dried beef, chopped 1/4 cup chopped green pepper 2 Tbls. minced onion 1/2 cup sour cream 1/2 tsp. minced garlic 1/4 tsp black pepper 1 tablespoon chopped pickled jalapenos (add another Tbls. if desired) 2 Tbls. butter 3/4 c. chopped Surratt Farms pecans Using electric mixer, blend together softened cream cheese and milk. Stir in dried beef, green pepper, onion, sour cream, garlic, pepper and jalapenos. Mix well. Pour into sprayed 1 quart baking dish. Melt butter in small skillet, add pecans and saute over medium heat until light brown. Spread over cream cheese mixture and bake in a pre-heated 350 degree oven for 20 minutes. Delicious as a topping for baked potatoes or as a spread on warmed wheat crackers. Special Notes: For a little different flavor, I have added two tablespoons drained, crushed pineapple when using with crackers. A favorite of my family especially during a holiday gathering.
