Special thanks to: HH, Bossier City,, LA Servings: 16 Directions: 2 ½ cups flour 2 cups sugar ½ cup cocoa 3 eggs 2 ½ tsps. baking powder ¾ cup butter 1 ½ tsps. soda 2 tsps vanilla 1 tsp. Salt 2 cups shredded zucchini 1 tsp. Cinnamon ½ cup milk 1 cup chopped pecans Combine flour, cocoa, baking powder, soda, salt & cinnamon; set aside. Mix sugar & butter until smooth: add egg one at a time, beating well after each addition. Stir in dry ingredients alternately with milk. Add nuts. Bake in 10” tube pan or bundt pan. Bake in a 350 degree oven for one hour or until toothpick comes out clean. Cool 15 min. in pan. Turn out on rack to cool. Drizzle with glaze of 2 cups confectioners sugar mixed with 3 Tbsps. milk & 1 tsp. vanilla. Special Notes: YUMMY, YUMMY, YUMMY. Hardly anyone can tell that there is zucchini in this cake. It's very good!
