Zenya's White Chocolate Pecan Delights

Special thanks to: MH, Raleigh, NC Servings: 12 Directions: 2 1/4 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt 1 cup (2 sticks, 1/2 pound) margarine - Room Temperature 3/4 cup sugar 1/4 cup packed dark brown sugar 1/2 cup packed light brown sugar 1 tablespoon lemon extract 2 eggs 12-ounce package White Chocolate Morsels 2 cups Surratt Farms Pecans COMBINE flour, baking soda and salt in small bowl and set aside. In a larger bowl, combine butter, granulated sugar, brown sugars and lemon extract and mix with a fork until all ingredients are mixed roughly. Add eggs and mix with a spoon until the mixture is a creamy consistency. Stir in flour mixture half at a time from small bowl, Stir in morsels and Surratt Farms Pecans. Drop by rounded tablespoon onto ungreased baking sheets. BAKE in preheated 375-degree oven for 9 to 11 minutes or until golden brown. Let stand for 2 minutes; remove to wire rack to cool completely. Then enjoy!! Special Notes: I created this recipe for my Fiance who is allergic to chocolate, but not white chocolate. Additionally she LOOOVES pecans, so what better treat than to combine the two into a delight that always brings a smile to her face.
